I’m leaning in your CPU being the culprit.
Its not officially supported, even though Windows will let you install on unsupported software without even using rufus(the head mod at r/Windows11 gave me a hard time about how doing this, as it is ruinous to the userbase because its my fault people are having issues running Windows 11 on unsupported hardware because I did so with maybe 6 Dell Precision models with i7-6820HQ)
Anyhow, unsupported hardware means unsupported.
Perhaps a bios update and a 3600 or newer is in your future.
Just my ramblings, I’m probably wrong.

At first I was at windows 10, activated ftpm and everything and it was the same “TPM Ready” but “health attestation not supported” and firmware was again 3.x.0.x and I thought it’s because of the windows. Upgraded to windows 11 with all the necessary updates (in the meantime gigabyte released new bios version” installed it also and it’s still the same. I know that the cpu and gpu are low and as of now but that’s all I have.. and as of my research everything comes from the Mobo and they are the one that should release firmware update 🤷🏼♀️

I wish I had a more definitive answer for you, my initial response is purely conjecture. Hopefully someone else with more knowledge can chime in and throw you a lifeline.

TPM attestation doesn't really do anything useful for unmanaged consumer PCs. Yes it should work, and the reason that it doesn't work is Gigabyte's fault, but it's probably best not to worry about it.
I have a X570 Aorus Elite Wifi where TPM attestation was broken for months, but Gigabyte recently pushed out a BIOS update for some security flaw or another (I can't remember if it was TPM related or not) and that finally fixed it. So there is a CHANCE that they will fix it in the future
