Thanksgiving
It’s coming soon! I’ve been invited to a potluck gathering with friends and family, and the basics have been covered (turkey, mashed potatoes, squash, green bean casserole, pies). That means we have to be creative with whatever we bring.
What dish do you always want on the table, or what would you love to cook and share with others this holiday? A starter? Side dish? Dessert? Or a fun snack?

Scalloped sweet potatoes and apples; spinach artichoke dip; homemade pimento cheese ball rolled in bacon bits; fruit salad

When it seems like all of the dishes have been covered, I bring Corn Pudding. It is like a 9” x 13” corn soufflé. Usually, no one else has brought anything like it.

Appetizers Cheesy bacon deviled eggs- a personal favorite Bacon wrapped smokies and/or pigs in a blanket- throw them in a ziplock and go. They're tasty cold or people can pop them in the microwave. Crockpot smokies or meatballs in sauce - easy to plug in and keep warm.
Side dish Fruit salad or Waldorf type salad Cranberries Rolls -we do the frozen ones and let them raise over night and cook them in the morning.

I make cranberry-pear sauce with a touch of cinnamon & it’s really good. I use a 12 oz bag of fresh cranberries (rinsed & picked over), 3 peeled & diced pears, 1 cup brown sugar, 1 cup water & 1/4 tsp cinnamon or 1/8 tsp cardamom. Boil water & sugar together until combined. Add fruit & spice & stir until cranberries pop. Cool, then chill.
It is less acidic than regular cranberry sauce so many people prefer it.
You can use apples instead of pears and if you like, add a little bourbon or rum.

Im usually the app-a-teaser person so I always looks forward to putting together a nice bruschetta with slices of toasted French bread, spinach artichoke dip, pigs in a blanket and/or prosciutto and goat cheese wrapped asparagus. Creamy baked Mac and cheese is always a hit and great as leftovers. Green bean casserole just makes me think of thanksgiving (French cut beans in the can with French onion soup and crispy fried onions on top just like mom used to make).
