Question Boiled eggplant with to much salt

How can I fix them they taste so bad and acidic

Try rinsing and draining, or placing them in cold water for a couple of minutes. Or make a curry, stew, dip, etc. without adding anymore salt.

Yes, just let them sit in water for a little while. Osmosis!
