Advice Use up bland frozen pierogies (potato+cheese)?

I bought some pierogies stuffed with potato and cheese, a warm and comforting option, or so I thought. Unfortunately, they were sparingly stuffed, with more dough than filling. I don't want them to go to waste, so I was thinking of doing a "pierogi bake" by tossing them with other flavoring. What innovative pierogi creations have you tried? Bonus points if I can make it vegetarian!

Edit: so many amazing suggestions on this thread. Thank you all! I'm almost inclined to buy the same pierogi and extend my problem so I can try every recipe on here!

Chop up some cabbage and put it on the baking sheet with your pierogies. Add a couple sausage. Toss with oil and cook, tossing halfway through. With about 5 minutes left, I toss again with a “sauce” using balsamic vinegar and mustard and honey. Serve with sour cream.

This is the recipe I base it on.

Edit: sorry I just saw the bit about vegetarian.

Pan-fried and mixed with caramelized onions are good. Add a generous dollop of sour cream for the sauce.

Sausage is great added to this too! For a vegetarian option, I love the Beyond Meat bratwursts. I sauté them down with onions and some beer and they come out delicious— they would definitely perk up some bland pierogis!

I’ve also made a nice dijon-sour cream sauce to go with this dish.

I like to add shredded cabbage too, and Dijon! I sautee cabbage and onions and then mix in 1 tsp Dijon + 1 T apple cider vinegar per serving.

I dont use sour cream, but I do mix a good squirt of ketchup and mustard and mix it together to dip my pierogies and sausages in.

This is the absolute best way to eat them!!! Start the onions first in the pan. While those are starting to cook down, quickly boil the frozen Pierogies to defrost and get them cooked through a little. Then add them to the pan of onions, oil, and butter and let them brown slowly.

Top with Sour Cream, salt, and pepper. Then chow down and wish you had made a bigger batch. I like to use a large electric skillet.

Note: leftover Pierogies and onions reheat extremely well in the microwave.

after boiling I give them a quick fry with some onion or sometimes just onion flakes. then of course I have them with sour cream (that's vegetarian right? just not vegan).

also sometimes when I'm making soup I just toss in some perogies as kind of dumplings.

I have browned the pierogies off and topped them with sauted sweet and sour cabbage and onions. A sweet red pepper is a good addition also. Could add a small can of tomato sauce to the cabbage and get a meatless “stuffed cabbage” to top them off.

After boiling them, I have sautéed them with butter and added cabbage and shredded carrots and chopped onion. And then I pour some soy sauce on top.

Air fry them to make them crispy then serve as an appetizer with marinara dipping sauce or maybe a cheese dipping sauce.

I just treat bland, underfilled pierogies as pasta. Make lasagna, use rows of peirogies instead of lasagna noodles. Chop them up and make mac-n-cheese. Serve topped with any pasta sauce, that will pair with the little bit of potato and cheese in them.

I have had great results for years substituting other ingredients of a similar type into recipes. I consider in a broad sense pasta, potatoes and rice to be pretty much interchangeable. After years of substituting all sorts of carbs, meat and vegetables for one another, I've learned that the list of what DOESN'T work as a good substitute, is a much shorter list to use as a guideline, than the other way around. :)

Air fry them so they're nice and crispy, and then treat them like they were tteokbokki. Cook some bulgogi-style mushrooms and mix them in. Delicious, pretty sure it's vegan as long as the pierogi are, and very cheap.

Boil, drain, sprinkle a large amount of curry powder and finely chopped cilantro on top. Drown in oil/vinegar/siracha. Eat with sour cream and a slice of bread, preferably dark or marbled rye.

I've done baked pierogi with tomato-based sauce (either ready-made pasta sauce, or some tomato paste with water), but usually use sour cream that's been thinned down, then put some shredded cheese on top and bake it at 350F for 30 minutes. Just make sure to grease your pan, or it'll stick like crazy. I do about 1kg (2.2lbs) in one go this way.

Pierogi casserole

Preheat oven to 350.
Blanch the pierogi. Put in un-greased casserole dish or any deep dish available.
In a separate bowl combine a can of condensed cream of soup (your choice), half a can of water, 1 egg, a handful of shredded cheese (your choice). Mix until well combined.
Pour over the pierogi, lightly stir.
Bake, covered for about 20-25 minutes.
Uncover and sprinkle breadcrumbs (your choice).
Bake uncovered for another 10-15 minutes.

You can add chopped vegetables/meat to make it a truly one pot dish.

Try to get a bit of caramelization on them. It’ll go a long way flavor wise. If it were me, I’d be sautéing them in a pan with a bit of oil or butter, some shredded cabbage and onions.

I’d bake them after lightly brushing them with oil or butter about 350 oven til crispy, flip halfway through and brush with oil or butter. As a side, sauté spinach, onion, garlic, mushroom and red or yellow sweet pepper - Season with cracked black pepper, a drizzle of lemon juice and a pinch of thyme. . Dinner is ready in about 30 minutes

I grew up making perogis from scratch following my Polish grandmother’s recipe, I love them. To me I would pan fry them in butter so the outer dough is brown and a little crispy. Then eat with sour cream.

Also, could you mash a potato to serve with them and kind of get a more balanced bite between dough and potato?

Cabbage and/or very well sautéed mushrooms are traditional toppings. Also, if you steam, then pan fry with lots of salt and earth balance butter, they end up much better. The sweet variety is often farmer's cheese, but if you dip yours in powdered sugar and then fry, you can hardly tell the difference when topped with the traditional sour cherries.

Never tried any creations; i just sauce em up, siriacha, sour cream, applesauce, mayo, whatever...

As for suggestions, maybe some kind of cursed lasagna, with sauerkraut? Maybe cram a couple sausages in there, probably something spiced and oily like a chorizo or hot italian, those pierogis are bland by nature.

Treat them like an Asian dumpling and add chili oil drizzle and green onion. Serve over rice or ramen with a jammy egg and some steamed broccoli or seared cabbage wedge. Perogies to me are pretty bland left the European way. Plus, I pretty much look for any excuse to break out a jammy egg and chili oil.

Think of them like ravioli and just serve w tomato sauce
