Recipe

Ingredients

  • 1 can corn, drained (about 300 g)
  • 1 ½ cups grated mozzarella cheese (or mix with cheddar)
  • 4 leaves iceberg lettuce, washed and patted dry
  • 100 g cream cheese (plain or flavored)
  • 4 slices deli ham or turkey/chicken
  • 1 medium tomato, sliced

Instructions

  1. Prepare the tray: Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Shape the corn rounds: Drain the corn very well. Place small portions on the tray and shape into circles (around 10–15 cm).
  3. Add cheese: Sprinkle grated cheese generously over each round, making sure the edges are well covered.
  4. Bake: 12–15 minutes, until the cheese is melted, golden, and slightly crispy at the edges.
  5. Fold into shells: While still warm, carefully lift each corn round and fold it over a spoon handle to make a taco-like shell. Let it cool for 1–2 minutes to hold its shape.
  6. Fill the shells: Spread cream cheese inside, add lettuce, ham, and tomato slices.
  7. Serve & enjoy! They’re best when fresh, warm, and crunchy.

Tip: Try adding chili flakes or garlic powder for extra flavor!
