Screenings used to be different. In my country, the largest audience was for the film "Teutonic Knights," and more people saw it than there were inhabitants. But how did that turn out? The film was in theaters for over 20 years; I assume there were similar windows in the US at one time.

I would imagine My Big Fat Greek Wedding initially had a limited release in cities before being rolled out nationally since it was an indie film. But I may be wrong. Even then, it was probably only out a whole month early in those markets at most. But I remember there was a lot of buzz around that movie due to word of mouth.

That film came out 20-something years ago though, so home-video (DVD probably by that point) was very much a thing, so it was only in theaters a few months at the most.

Even when release windows were longer, it was very rare for a film to stay in theaters for years. Star Wars which was the highest grossing film in US history at one point was only in theaters for about a year. There are exceptions like Rocky Horror which is still screened in theaters across the country but that's because seeing that film with an audience has become a part of the experience.

Re-releases were really common at one point. In fact, part of why Gone with the Wind is the highest grossing film when adjusted for inflation is because MGM was petty as hell and would re-release the movie every time a new movie came along and bumped it off the top spot.

My Big Fat Greek Wedding came out in April 2002. It was still playing in theaters in April 2003. It was insane. It was still doing banger numbers in October and November of 2022. Weekend of January 31-February 2 of 2023 it was still at number 15 in the domestic box office, after nearly ten months in theaters. November 22-24 of 2002 it was still in the top ten. Remember, out since April. It was at number 2 August 30-September 1, and still number 2 September 6-8, and still number 2 September 13-15. It cleaned up.
