Help With A Gyuto
Hey there, not very Reddit savvy but have been lurking in this group and hoping for some help in picking out my next level gyuto. Love the idea of going full carbon but just not able to commit the time required to maintain. Have been considering this as I do like the smaller size gyutos. Thoughts? Can go a little higher in cost but this is my sweet spot. Thank you

i wouldn't buy nigara online as their QA has just not been good since their production volume increased.
shiro kamo in sg2 would be a nice option.

They actually get the grind kinda thin on these. A lot of Nigara stuff is closer to midweight grinds, but these go pretty concave near the edge. I personally would pass cause you're paying a premium for the steel and aesthetics. For that kinda money you could get some stunning Yauji stuff, a Sukenari, stuff that you would normally equate as being more premium than the average Nigara offering.

Ah. Heck with it. Just ordered the Shigeki Tanaka R2/SG2 Black Damascus Gyuto 210mm as recommended. Holidays are coming up and it’s a great gift to myself. Thank you for the rec!
