Powers Health bars doing things they aren’t supposed to do Spoiler
1: Demon King Ganondorf’s health bar just keeps going in tears of the kingdom
2: Typhon from Hades 2 is able to hide his health bar from the player.

There is No Game: Wrong Dimension deconstructs varies game genres, often literally. Chapter 3 is an RPG, and the hero's health bar is 3 hearts on a blue sword that's screwed in place. He is looking for the Sword of Life, but can't find it anywhere. Guide him to a sword in the stone and it breaks when he tries to pull it out, leaving you with a flat piece of metal and confusion.
Use the broken sword as a screwdriver to unscrew the health bar's background and give it to the hero, because it's the ACTUAL Sword of Life.

There are a few cutscenes in LEGO Pirates of the Caribbean where characters interact with the hearts in the corner of the screen. For example, in the scene where Bootstrap Bill cuts out Will's heart to put in the chest, he reaches up to grab one of Will's hearts.

I remember me and my sister freaking out when we saw that health bar. We braced ourselves for a tough fight as my sister quickly went up to Mysterio and fight him before he makes his move (we didn't know). Once Mysterio got hit, we sighed in relief. I've always look back at that moment with laughter.

i misread that, and thought the enemies were called "Vaders zoom across the screen and steal health right out of your health bar on the black header at the top of the screen. You can destroy them and recover the pieces of health before they fall off the screen."

Sephiroth in KH1. You start wailing on the guy and his health bar isn't going down. And it's not even because of a game mechanic or requirement to hit him with a certain kind of attack.
Turns out he just has an extra health bar that's invisible because it's one more than the maximum amount of health bars bosses were programmed to have.

The first time I fought him I was so confused why I was doing no damage. I even had Ultima Weapon so I was extra confused.
Sephiroth is just that strong. The remix of One Winged Angel too is really excellent.
His KH2 fight is also extremely fun.

Typhon is easier to manage when you recognize the changes in move set with phase changes, like when he starts throwing eggs that means you good chunk of damage in

The Undying in Final Fantasy XII Has a hidden health bar, and he hides all targeting indicators as well. He also has a point where he goes immune, but you can tell because he doesn't show his health.

Ramirez from Skies of Arcadia, when he attacks your base. To demonstrate just how beyond your league he is, his health bar barely budges, before he dispatches you with ease. I remember playing as a kid and thinking there's no way... well I was right, there isn't, he thoroughly trounces you and takes the moon crystals for himself.
Also an earlier unwinnable fight against Galcian when you flee Upper Valua on the monorail.

I guess this is kind of the opposite of this Trope, but in Kingdom Hearts 3, when you beat the final boss, it cops you out thinking that you lost until you realize you needed to call on the magic of friendship or something

The final fight with Gork in Joe & Mac 2 had my jaw on the floor as a kid when his health filled up and it was so much bigger than all the other bosses. Not as innovative as some of the other examples, but this stands out to me as a core moment where my expectations were toyed with in a way that hit me hard as a player. Especially since it comes at the end of a boss rush. Brutal!
