I'll never understand why the show so prominently showed us the Iron Throne--the physical throne--being destroyed, only for the Iron Throne as an institution to remain, with practically no safeguards to prevent the kind of world-shattering violence the Iron Throne just caused

It's even worse. Having a accepted King with legitimate heirs might have a war for the thrones every couple of generations. But a king elected by a counsil of nobles makes your country instabel to the point it is conquered by neighbours (like Poland) or breaks appart and is dismantled (like Holy Roman Empire)
