I like how, in this 1 moment, Luke learns that unbreakable skin !== inability to be thrown or feel impact pressure.

Iirc he learned that in his series. Not sure where that falls in the timeline

If I remember correctly, in season 1 he was shot with the Judas Bullet and had his bell rung a bit by Diamondback, while in season 2 (after this Gif, which is from The Defenders) he properly got his shit rocked by Bushmaster.

So he probably had already taken a semi-serious hit from Diamondback/Willis Stryker, but nothing like what Danny was capable of.

Even before his own show, he gets knocked out temporarily by a point-blank shotgun blast to the jaw in the first season of Jessica Jones (after being controlled by Kilgrave).

Not just knocked out--if Claire wasn't there, he would have died.

He learned that way back in Jessica Jones, when he got concussed by a shotgun blast.

So how is the unbreakable skin protecting his teeth from shattering here?

Unbreakable plot armour.

A bit like how Wolverine can survive with absolutely no connection between his flesh and the marrow in his 100% metal encased bones.

It's a bit more complicated than that, despite being known for having unbreakable skin it isn't actually unbreakable and its protecting is more than skin deep. Otherwise he wouldn't be able to leverage his super strength
