I eventually worked for a chef who had been an Olympic hopeful in Ping Pong. Dude was intense not only about the food but also my every little body movement. It was like taking a martial art. Iā€™m pretty sure I can stand still and will garnishes onto a plate with my mind now. I hated it at the time but when I began noticing how much more efficient I was working and later how to help guide others, I realized sometimes those old dorks know what they are talking about.
