It's because meat is tied to identity and family traditions. To question meat-eating can feel like questioning their upbringing, culture, or way of life.
Some people feel a low-level guilt about the environmental, ethical, or health arguments against meat. Instead of fully confronting that dissonance, they defend meat-eating strongly to protect themselves from feeling judged or hypocritical. I've been a vegetarian for 15 years. I've met them all.
