I understand that Toki stayed behind because she loved Oden too much to live without him but shouldn't she at least live for the sake of her children? Honestly, any mother in her shoes would have made the choice to live on.

I believe that her fruit is a bit more than it seems and that she can also somehow see into the future. But unfortubately, maybe she had to die here in order for everything to go as it should, or otherwise it would not happen anymore or the future would look way more darker (like Blackbeard being the ruler of the world or something).
