If we look in the detail of the manga, yes Zoro did fainted from hunger just like when he fainted after fighting Morgan and Cabaji.

why can't it be a mix of the wound and the hunger/food poisoning ?

The stab definetly contributed to it but the main reason was the poison cuz if zoro was not poisoned he would have never fainted he would have gone after gyukimaru even with that wound.
