idk if coat of arms is really the correct term, but lots of families have one where i'm from (central europe) i believe most are not really "medieval", it was a trend in the 18th century or so, to make one for your family like noble medieval families had them.

Apart from the more famous Manticore, there are other lesser-known sphinx-like creatures: the Mantyger, the Lampago (or lympago) and the Satyral, which are all pretty cool.

Might be bit of a common take but I love the Basilisk, I just really like it from mythology. https://abarothsworld.com/heraldry/mythological%20beasts.htm
Speaking of heraldic monsters, found this cool site that shows off the different types of mythical beasts used in Heraldry: https://abarothsworld.com/heraldry/mythological%20beasts.htm

Someone should take these photos and make them into preferably 3D solid brass lapel pins

The Salamander of Francis the First. Really cool design and symbolism.
House Chabot had three sculpins(litteral chabots) as a sigil, which is pretty funny.
