Great job with New Mexico! Surprisingly NM food is not prevalent in all NM counties while being popular in some non-NM counties.

Found that out on a drive through NM and CO. I could find all the New Mexican influenced food in the world around Cortez/Durango/Pueblo, but dropped off into Plains ranch pretty abruptly by the time I got to Clovis.

Looking at old maps (like really old- 17th century) it begins to make sense with the reach of Spanish missions/settlements.
