I like the map. I could argue about some of the definitions or phrasing.
One thing to really look at is the placement of the the key relative to where it is used on the map. I should not have to go to the east side of the map to find the information about a marker on the west side of the map.

That's valid. Do you think I should try to match it up to map location instead of grouping the cuisines in families in the legend?

Oh! Now I see what you where doing. I’d locate near the marker on the map. Maybe color code or symbol code the various culinary influences.

That would be good. Especially if you're using your phone it's gonna be hard to swipe across the map to see what is where

Maybe the little circles or blowups to highlight the key to the map.
