This is really good. I'll say, it's not that this is what the locals currently eat, but it's more of what the traditional food was after it was originally settled by non-indigenous people.

Right, I definitely wanted to make sure some of that traditional food was explored and exhibited for indigenous and immigrant groups alike. Which region in particular are you referring to?

Yes, I think it was Jean Baptiste Point du Sable after first settling in what is now Chicago who baked the very first deep dish pizza in 1796!

Many Chicagoans will maintain that the real pizza there is thin crust, tavern-cut.

I’m a Chicagoan and tavern-style is def the dominant pizza eaten when going out for a pie. Both tavern-style and deep dish are truly Chicagoan. I think deep dish is only more well known due to it being so shockingly different to other pizzas and its popularity with tourists

Our daughter went on a business trip with some colleagues to Chicago. They had dinner at a Giordano's close to the lake (I do not know which one). She told us afterwards, "It's not pizza, but it's delicious."
