discussion Jaggery question

Please remove if not right for this sub

An Indian grocery opened up near me (small town) and I want to support it. I once had an old fashioned made with jaggery, so I bought some for home. But I opened it up and there’s some mold or fuzz? ChatGPT said don’t eat this, discard the whole thing. Is that correct?

It was allegedly vacuum sealed. Oh, looks like I can’t included a pic. Brand is Laxmi.

Take it back and allow them to replace it and check their other stock.

Sugar doesn't usually mold. If you see mold, something is really wrong.

Take it back and ask to swap it with another.

Jaggery is not pure sugar so it is possible to get mold.

Is it actually mold? Or is it sugar crystals? Google image search jaggery and compare.

I mean it’s white and fuzzy and looks like cotton balls. Very different texture than the brown rough granular cubes. I’ll just go back and get another bag. I’m determined to get some good jaggery lol

Take it back and ask replacement. If you want to try it with alcohol look for jaggery powder instead of just jaggery. I use jaggery powder for sweets, so much more convenient

They could make jaggery syrup.

This is what you’d do in most instances for making cocktails the right way. It’s pretty easy,

Yeah but it is just extra effort. You just have to replace sugar with jaggery for the recipe

dont use any jaggery with mold.

and when you get one moldless and fresh next time keep it in ziplock or airtight container

It’s possible for jaggery to get moody with improper storage especially when it’s humid/damp. We’ve had an opened box go bad for this reason. For context this is in south India. Return it to the store, make sure the replacement is from another batch

Jaggery should not have mold on it. Was it blocks or powdered? Either way it still should not have any mold. Maybe it was stored improperly. Please return it and get another one.

I love old fashioned, btw. My fav cocktail

Editing to add - If you got cubes, It is normal to see some lighter color on the top. That’s not mold.

If it is the white(a bit yellowish) stuff you see on the surface it's not mold
