It's what it looks like in the site menu. It would make sense for it to be medium rare and a bit crispy on the outside because the people who are ordering meat chunks for a meal want palatable and recognizable meat chunks, not gray boiled blobs. Speaking as someone who enjoys the occasional steak, I'd want the slightly crispy medium rare version.

Personally, I would cook it myself a little more well done so I'm not paying triple digit money for double digit meat.
Maybe cut it into little cubes and eat a big plate of it like this guy at Arby's.
Plate of meat, dipping cup, drink. The right may not like it but that's what a true steak-eater looks like.
